Instructions
Step 1
Pat dry the chops after washing them in lemon, vinegar and water, and place them on a chopping board.
Step 2
Combine the rub ingredients and then apply to each chop on each side.
Step 3
Heat your grill/broiler to a high temperature place in the chops, and brown on both sides.
Step 4
While the chops are cooking, finely dice the onion and chop up the fresh coriander.
Step 5
Heat a large pan and add two tablespoons of vegetable oil add in the onions and cook until translucent. Add in the garlic and ginger paste and cook for a further minute while constantly stirring. Add in the sauce spices and stir for about 30 seconds, do not burn the spices. Pour in the tomato Pasata and stir before adding in the tomato puree and stirring, cover and allow to simmer for 15 minutes. Add in the chopped coriander stir the cover, add in the water if the sauce is too thick, add the chops into the sauce cover and simmer for about twenty minutes.
Step 6
Plate up, serve with rice, garnish with more coriander, lick your lips and enjoy.
