Step 1
1. Preheat a grillor grill pan over medium-high heat.

2. Season the chicken breasts with olive oil, salt and pepper.

3. Grill the chicken breasts for about 6-8 minutes per side, or until cooked through and no longer pink in the centre. Remove from the grill and set aside to rest.

F In a small bowl, whisk together the ingredients for the dressing: extra virgin olive oil, balsamic vinegar, Dijon mustard, salt and pepper. Set aside.

5. Arrange the mixed lettuce leaves on two plates.

6. Top the greens with cherry tomatoes, fresh mozzarella slices, avocado and grilled chicken slices.
Step 7
7. To serve, drizzle the dressing over the salad, garnish with fresh basil and top with balsamic glaze.
