Slice the bread in half and spread some mayo on both sides.

Ease down salad and tomatoes on one side of the bread.

Warm up a grill and ease down the porchetta for a minute or two, then put it into the panini.

Add some marinated artichokes and some scamorza slices. Close the panini and put it on the grill for a couple of minutes.
