Add a few ingredients to your rice cooker to make this tasty rice. I've preferred it with white rice but brown can be used as well. Dry-roasted cashews go really well with the rice. This is as nice as takeaway rice but without added salt or oil.

Instructions

Step 1
Rinse rise if needed.
Step 2
Add coconut milk, curry powder, pepper, top up with water to the correct level.
Step 3
Run rice cooker.
Step 4
Once rice is completed, stir and air. Once cooled stir in chopped coriander.
Step 5
Add cashew nuts to a hot pan without oil. Cook until browned. Add on top of rice. Good accompanied with lime pickle and mango chutney.
