Instructions

Step 1
In a mixing bowl, combine all sauce ingredients (soy sauce, sesame oil, chicken bouillon, miso paste, chili oil, sugar, and chili bean sauce). Mix until smooth with no miso lumps.
Step 2
Wash and dry cucumbers, cutting off the ends. Use a rolling pin to crack them without mashing.
Step 3
Tear cucumbers into bite-sized pieces by hand (this creates a rough surface that holds sauce better than knife-cut pieces).
Step 4
Add cucumber pieces to the sauce and mix until evenly coated.
Step 5
Serve topped with toasted white sesame seeds and chili threads, or refrigerate for later.
