Simmer the soda: Pour 2 cups of Coca-Cola into a saucepan. If you prefer a sweeter, thicker syrup, add 1/2 cup of granulated sugar to the saucepan. Stir to combine.

Heat and reduce: Place the saucepan over medium heat and bring the mixture to a gentle simmer. Stir occasionally to ensure the sugar (if used) dissolves completely.

Reduce to syrup consistency: Allow the Coca-Cola to simmer uncovered. Continue cooking for about 20-30 minutes, or until the liquid has reduced by about half and has thickened into a syrup consistency. Keep an eye on it to prevent burning, especially towards the end of the cooking process.

Check consistency: The syrup will thicken as it cools, so test a small amount on a spoon to check the consistency. It should coat the back of the spoon and be slightly thick, similar to maple syrup. If it’s not thick enough, continue to simmer until it reaches the desired thickness.

Cool and store: Once the syrup has reached the desired consistency, remove it from the heat and let it cool completely. Pour the cooled syrup into a clean, airtight container or jar.
