Instructions

Step 1
1. PREP: PREHEAT OVEN TO 425F. Wash and dry produce. Peel and mine garlic, cut broccoli into bite size pieces.
Step 2
2. Cook rice: Heat a drizzle of oil in rice cooker, add garlic and cook until fragrant. Stir in rice and 3/4 cup water enough water to bring to fist line of index finger with poking rice). With pinch of salt. Cook until tender.
Step 3
3. Roast broccoli: toss broccoli on baking sheet with drizzle of oil. Salt and pepper. Roast on top ravk for 15-20min.
Step 4
4. Cook chicken: while broccoli roasts and rice cooks, pat chicken dry and season all over with salt and pepper Heat a drizzle of oil in pan over medium to hight heat. Add chicken and cook until browned and cooked through 3-5min (internal temp of 165F). Transfer chick3n to a cutting board to rest.
Step 5
5. Make sauce: add jam, ponzu, Sriracha and 1/4cup water to same pan over medium heat. Cook 1-3 min. Remove from heat and stir in 1 tbsp butter. Season with salt and pepper.
Step 6
6. Finish & serve: fluff rice, slice chicken cross wise on diagonal. Divide chicken, broccoli and rice between two plates. Spoon sauce over chicken.
