Instructions

Prepare the Filling:

Step 1
In a skillet, cook the ground hamburger until browned. Add the minced garlic and sauté for another minute until fragrant.
Step 2
Add soy sauce and stir to combine. Remove from heat and let the mixture cool slightly.
Step 3
In a bowl, mix the ricotta cheese with the cooked hamburger mixture. Add the chopped spinach, salt, and pepper to taste. Set aside.

Make the dumpling dough:

Step 4
In a mixing bowl, add the flour and pour in the hot water gradually. Stir with a wooden spoon or chopsticks until a dough forms.
Step 5
Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic.
Step 6
Cover the dough with a damp cloth and let it rest for 30 minutes.

Assemble the dumplings:

Step 7
Roll the rested dough into a log and cut it into small, equal portions (about the size of a walnut).
Step 8
Roll each portion into a thin circle, about 3 inches in diameter.
Step 9
Place a spoonful of the ricotta and hamburger filling in the center of each dough circle.
Step 10
Fold the dumpling in half and press the edges together, crimping or pleating to seal.

Cook the dumplings:

Step 11
Heat the vegetable oil in a large skillet over medium heat. Add the ginger and scallions, and cook until fragrant, about 2 minutes.
Step 12
Sprinkle the sugar and a pinch of salt into the oil, stirring until the sugar dissolves.
Step 13
Add the dumplings in batches, cooking each side for 2-3 minutes until golden brown and crisp.
Step 14
Once the dumplings are seared, add 1/4 cup of water to the skillet, cover with a lid, and steam for 5-7 minutes until the dumplings are fully cooked and the water has evaporated.

Serve:

Step 15
Drizzle the dumplings with the ginger scallion oil from the pan and serve warm. Enjoy the balance of savory filling with a hint of sweetness!
