Instructions
Step 1
Butterfly chicken breasts into thin pieces.
Step 2
Prepare your marinade: mix a teaspoon of harissa with some garlic, sweet paprika, cayenne pepper, olive oil, salt and black pepper (judge amount according to how spicy you want it). Coat the chicken pieces well.
Step 3
Prepare your egg mixture: beat an egg together with a bit more harissa, paprika, salt and black pepper. Set aside.
Step 4
Prepare your breadcrumbs: mix breadcrumbs together with paprika, salt and black pepper. Set aside.
Step 5
Prepare your dressing: mix 2-3 tablespoons mayonnaise with some olive oil, lemon juice, black pepper and a bit of sugar. Add some water to loosen a bit. Set aside.
Step 6
Coat chicken pieces in flour, then dip into the egg mixture and coat in the breadcrumbs. Fry until golden.
Step 7
Slice up schnitzel and serve warm with lettuce, tomatoes, avocado, croutons and drizzle dressing on top.
