Instructions

Step 1
Put beef in pan with onions and garlic. Cook until beef is done. Drain grease.
Step 2
Add in butter. Stir until completely melted.
Step 3
Add just the rice from the boxes Mexican style rice. Set seasoning packets aside. Cook until rice is lightly browned.
Step 4
Add in the Rotel (don't drain), corn, and beef broth.
Step 5
Add in both seasoning packets
Step 6
Put stove on low simmer. Cover pot and cook for 20 - 25 minutes
Step 7
Top with shredded cheese and put lid back on to melt cheese
Step 8
Serve with tortilla chips to dip in.
