2 teaspoonsgarlic

½ teaspoonground coriander
½ teaspoonfreshly ground black pepper
3 tablespoonsapple cider vinegar
1 ½ cupsketchup
1 tablespoondark brown sugar
1 tablespoonmolasses
1 tablespoonyellow mustard

Heat the oil in a large saucepan over

medium-low heat. Add the onion, garlic, chile, and ½ teaspoon salt. Cook, stirring occasionally, until the onion is translucent, about 8 minutes. Stir in the cumin, coriander, and black pepper. Add the vinegar and bring to a boil, then add the ketchup, brown sugar, molasses, mustard, and ¾ cup water.
Step 3
Return to a boil, then reduce the heat to low and simmer, stirring occasionally, until the flavors have melded, about 15 minutes.
Step 4
Season with salt. Use immediately or refrigerate in jars for up to 2 weeks.
