Mum's Trout Linguine
Quick and easy Trout Linguine from Mum

Ingredients
2 servings

3 tablespoonsevoo

0.5brown onion
finely diced
1 x 120gsmoked trout rashers
cut into small ribbons
200gLingini

45gParmesan cheese
freshly grated

2egg yolks
slightly whisked

sea salt
to taste

black pepper
to taste

Italian Parsley
to taste
Instructions
Step 1
Boil linguine for 12 minutes in salted water (1 tsp)
Step 2
In a large frying pan, heat oil a low heat, then add the onion.
Step 3
Stir continuously until slightly brown & caramelized.
Step 4
Add the trout ribbons and stir till cooked (about 5 mins)
Step 5
Add the cooked linguini from the pot with tongs or a pasta spoon.
Step 6
Mix together with the onion & trout till well heated.
Step 7
Next: Turn of the heat & Add the grated parmesan then the egg yolks & mix briskly adding pasta water until the right consistency, so it creates a little sauce (otherwise it'd be too dry)
Step 8
Taste for salt and also add a few grinds of black pepper.
Step 9
Divide the pasta into two preheated soup plates.
Step 10
I then just microwave each pasta bowl for 30 secs on max to ensure its well heated.
