Upon moving in to a new house over 50 years ago, a new neighbor brought this Italian Beef to us as a welcoming gift. It has been our favorite ever since.

Ingredients
10 servings
4 lbsirloin tip roast
1can beef consume
2bay leaves
2 tspgarlic powder
2 tspsalt
2 tspblack pepper
2 tspsweet basil
2 tsporegano
2 Tbspparsley
1can diced italian tomatoes
Peppercinis
halved to release juice, to taste
Instructions
Step 1
Preheat oven to 325*
Step 2
Mix consume, tomatoes and all spices. (Hold out Peppercinis for later)
Step 3
Place roast in roasting pan
Step 4
Pour consume mixture over roast
Step 5
Cover roasting pan and bake for 3-4 hours (I often prepare this in a crock pot cooking 5-6 hours on low. Needs about half the liquid when cooked in the crock pot)
Step 6
When beef is sufficiently done shred it with two forks
Step 7
30 minutes before serving place Peppercinis in the shredded beef. Halve the Peppercinis over the beef so the juice falls in the beef. Gently mix to distribute the Peppercinis and juice.
Step 8
Serve with hoagie buns
