Ingredients
6 servings

2 clovesgarlic
finely minced

3 ½ cupsvegetable broth

1 ½ tspcumin

½ tsppaprika

½ tspdried oregano

¼ tspcayenne pepper

salt

black pepper
freshly ground, to taste

1 ¼ cupfrozen corn
or fresh

1 x 15 ozcans cannellini beans

1.5 lbsboneless skinless chicken breast

1 Tbspfresh lime juice

8 ozFat free cream cheese
1 x 15 ozcan great northern bean
Instructions
Step 1
Add chicken to the Crock-Pot. All seasoning in with broth. Add great northern beans.
Step 2
Drain and rinse the cannellini beans in colander or mesh strainer. Measure out 1 cup and puree with food processor or mixer until smooth.
Step 3
Add corn, cream cheese, and pureed beans. Cook on low 6 hrs or high for 4 hrs
Step 4
Serve with dollop of plain Greek yogurt(for sour cream), mozzarella cheese, and tortilla chips if wanted.
