Surprise South Beach Mashed "Potatoes"

Ingredients
4 servings
4 cupscauliflower florets
2 tablespoonstrans-free butter spray
1 ouncefat-free half-and-half
salt
ground black pepper
Instructions
Step 1
Place a steamer basket in a large saucepan with 1/2 cup water.
Step 2
Place the cauliflower in the steamer and bring to a boil over high heat.
Step 3
Reduce the heat to medium, cover, and cook for 4 minutes, or until crisp-tender.
Step 4
Puree in a food processor, adding the butter spray and the half-and-half.
Step 5
Season with salt and pepper.
