Nutritious Stir-Fried Eggplant (Gaji Bokkeum)

5 steps
Cook:10min
Hello, K Friends! Today, I'd like to introduce a dish called "stir-fried eggplant" using a highly nutritious ingredient, eggplant. Stir-fried eggplant is prepared by grilling the eggplant without adding oil, which reduces some moisture and enhances the chewy texture while keeping the flavors more light and subtle. I highly recommend giving it a try at least once!

Instructions

Step 1
1. Slice 1 green onion thinly and chop 2 cloves of garlic. Cut the red chili pepper in half and slice it thinly.
Step 2
2. Trim the ends of the eggplants. Cut them in half lengthwise and then into bite-sized pieces.
Step 3
3. When the water is boiling, place the eggplants in a steamer. Steam them for about 4 minutes. After 4 minutes, take them from the steamer and let them cool slightly.
Step 4
4. How to make seasoning sauce: In a bowl, add 2 tablespoons of soy sauce for the soup (gukganjang), 1 tablespoon of tuna fish sauce or fish sauce, 1 tablespoon of sesame oil, 1/2 tablespoon of minced garlic, 1 teaspoon of sugar or honey, the sliced green onion and red chili pepper, and 1 tablespoon of ground sesame seeds. Mix the seasoning sauce well.
Step 5
5. Place the eggplants in the seasoning sauce bowl. Gently mix them together. If some of the eggplants are large, you can tear them in half. Transfer the dish to a serving plate.
