Instructions
Step 1

Mix the softened butter with the white and brown sugars until you get a smooth consistency.





Step 2

Add the vanilla extract and the egg. Mix until fully combined.


Step 3

Add the bicarbonate of soda, salt and sift in the flour. Mix using a wooden spoon until all the flour is fully incorporated. Lastly, add the mixed spice and mix in well (you can use cinnamon instead or completely skip this step).





Step 4

Scoop out the cookie dough onto a large baking tray, lined with baking paper, using an ice-cream scoop. This recipe should make approximately 15 cookies, but you can make them bigger or smaller, depending on your preference. If the dough gets stuck to the scoop, dip the scoop in water before each use and it will stop it from sticking.
Step 5

Bake the cookies in the oven at 190 degrees celsius for approximately 10-12 mins. They should still be slightly soft when you take them out. Once baked, use a teaspoon to push the middle down and form a dent in each cookie.
Step 6

Make the apple purée by peeling, coring and dicing the apple, then cooking until soft. Once cooked, drain the water and mash it with a hand blender or a fork, until you get a smooth purée. Mix in a teaspoon of cinnamon and a tablespoon of powdered vanilla sugar.


Step 7

Lastly, spoon the apple purée onto each cookie and drizzle caramel sauce over them. ENJOY! 🍎🍪🙂
