Instructions

Step 1
Parboil Potatoes: Cook the potatoes in salted water until they are almost tender. Peel and cut into large chunks.
Step 2
Sauté Aromatics: Sauté the onion and garlic in olive oil until softened.
Step 3
Add Mushrooms: Add the sliced mushrooms to the pan and cook until they are lightly browned.
Step 4
Combine: Add the parboiled potatoes to the pan with the sautéed vegetables.
Step 5
Season: Season with chopped fresh herbs, dried thyme, and black pepper to taste.
Step 6
Cook: Cook over medium heat until the potatoes are golden brown and heated through.
