500gpork shoulder steaks
trimmed of visible fat and thinly sliced
1 tspcornflour
½ tspbicarbonate of soda
40gbrown sugar
1 Tbspfish sauce
1 Tbsplight soy sauce
1 tspdark soy sauce
red chilli flakes
1 ½ tsplemongrass paste
olive oil spray
0.5red onion
small, thinly sliced
2garlic cloves
crushed
1 tspfresh ginger
grated
fresh coriander
finely chopped
2spring onions

Prep time 10 minutes, plus coating time

Step 4
Place the pork in a bowl. Add the cornflour and bicarbonate of soda with 1 tbsp water and leave for 15 minutes.
Step 5
Mix the sugar, fish sauce, light and dark soy sauces, chilli flakes and lemongrass paste in a separate bowl and add 3 tbsp water.
Step 6
Preheat the air fryer to 200C for 2 minutes.
Step 7
Spray the pork with olive oil and place it directly in the air fryer basket or use a foil/silicone liner that fits. Add a pinch of black pepper and air fry for 5-6 minutes, until it is lightly caramelised around the edges. Turn the pork pieces halfway through. Remove and set aside.
Step 8
Place the onion, garlic and ginger in the air fryer basket. Spray with more olive oil and cook for 2 minutes.
Step 9
Stir in the sauce and cook for a further 3 minutes, then add the pork and cook for 5 minutes.
Step 10
To serve, scatter with the coriander, spring onion and red chilli.
