12rice paper rounds
x 22 cm
1tin tuna
½ cupbean sprouts
1bell pepper
finely sliced
1carrot
julienned
¼ cupmint leaves
finely cut
¼ cupcoriander leaves
1lime juiced
1 Tbspfish sauce
salt
pepper
Dipping Sauce:
Instructions
Step 1
Combine the tuna, bean sprouts, red pepper, carrot, mint, coriander and 2 tablespoons of lime juice & fish sauce in a large bowl.
Step 2
In a separate large bowl, fill lukewarm water. Take each rice paper round and dunk it for a few seconds (until soft) and then place on a clean tea towel.
Step 3
Fill each rice paper roll with filling, fold in ends and roll up firmly.
Step 4
Mix ingredients of dipping sauce.
Step 5
Serve with dipping sauce and enjoy.
