- 1 stick of butter - 8 ounces smoked Gouda cheese - 16 ounces cheddar cheese - 16 ounces Colby Jack cheese - 6 ounces mozzarella cheese - 8 oz smoked gruyere cheese - 16 oz-1 pound elbow macaroni (depending on how much you want, 16 oz is one 9"x13" pan) - 1-2 eggs depending on amount of macaroni - 2 cups evaporated milk - 1 cup whole milk - Salt and pepper to taste - Smoked paprika and seasoning salt (Cayenne pepper and ground mustard can also be added) - 3/4 cup sour cream

Step 2
1. Preheat your oven to 350°F (175°C). 2. In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Seasoning salt can be used to.salt the water for additional flavor. Drain and set aside. 3. While the macaroni is cooking, cube half the cheddar and colby jack cheese and shred the smoked Gouda, gruyere, mozzarella, and remaining cheddar and Colby Jack cheeses. Mix cheeses and set aside. 4. In a mixing bowl, whisk together the eggs, evaporated milk, whole milk, and seasonings (seasoning salt, ground mustard, smoked paprika, Cayenne pepper) to taste. 5. In a large mixing bowl, combine the cooked macaroni, melted butter, and sour cream. Mix well. 6. Gradually add a handful of shredded cheeses, reserving some mozzarella for the middle layer. Mix in cheese cubes once custard and macaroni are incorporated. 7. Transfer the macaroni and cheese mixture into an ungreased baking dish, filling it halfway. 8. Layer the reserved shredded mozzarella cheese and some of the remaining shredded cheeses on top of the macaroni and cheese mixture. 9. Continue filling the baking dish with the remaining macaroni and cheese mixture. 10. Top the macaroni mixture with the remaining shredded cheese, ensuring it covers the surface evenly. 11. Loosely cover the baking dish with foil and bake in the preheated oven for 20 minutes. 12. After 20 minutes, remove the foil and bake for an additional 20 minutes, or until the top is golden brown and bubbly. 13. If desired, broil the macaroni and cheese for a few minutes to achieve a crispy crust. 14. Let the macaroni and cheese cool slightly before serving. Enjoy the flavorful, creamy, and cheesy goodness!
