Chicken Noodle Soup

Instructions

Step 1
1. In a large pot, heat a drizzle of olive oil over medium-high heat. Add your chopped vegetables (such as onions, carrots, and celery) and sauté until softened, about 5-7 minutes.

2. If using raw chicken breast, chop into bite-sized pieces and add to the pot along with freshly grated ginger, turmeric powder, and your preferred soup seasonings (salt, pepper, garlic powder, etc.). Cook, stirring occasionally, until the chicken is browned on all sides.

3. Pour in chicken stock and add the egg noodles. Bring the mixture to a boil, then reduce heat to a simmer and cook until the egg noodles are tender, about 6-8 minutes.
Step 4
4. Turn off the heat and stir in a few spoonful of Greek yogurt to add creaminess and a boost of protein. Mix until smooth and well incorporated. Serve hot and enjoy!
