Instructions
Step 1
Prepare the vegetable broth and cut the speck into cubes.
Step 2
Peel the apples and cut them into pieces, then immerse them in a bowl with water and lemon juice to prevent them from blackening.
Step 3
In a pan, fry the chopped shallot with half the butter until it becomes golden.
Step 4
Add the rice and toast it for a few minutes, then blend with the white wine. Add some rosemary. Start adding the vegetable stock little by little until the rice is cooked through.
Step 5
In another pan, brown the speck and apples until crispy and golden.
Step 6
Add apples and speck to the risotto almost at the end of cooking. Stir gently to blend the flavors.
Step 7
Stir in the risotto with the rest of the butter and the Parmesan, add salt and pepper.
Step 8
Garnish with a few sprigs of rosemary and serve the risotto hot!
