Instructions
Prepare the Butter Chicken:
Step 1
Marinate the chicken: In a bowl, combine the chicken pieces with yogurt, garlic, ginger, garam masala, turmeric, cumin, chili powder, lemon juice, and salt. Let it marinate for 30 minutes to an hour (or overnight if time allows).
Step 2
Cook the chicken: Heat oil in a large skillet over medium-high heat. When sizzling, add the chicken pieces in batches, being careful not to crowd the pan. Cook for 3 minutes on each side until browned. Set the chicken aside and keep warm.
Step 3
Make the sauce: In the same skillet, melt the butter or ghee. Fry the onions until they soften and start to brown (about 6 minutes), scraping up any browned bits. Add garlic, ginger, ground coriander, cumin, and garam masala. Stir for 20 seconds until fragrant.
Step 4
Simmer the sauce: Add the crushed tomatoes, chili powder, and salt. Simmer for 10-15 minutes until the sauce thickens and turns a deep red-brown color.
Step 5
Blend the sauce: Remove the sauce from heat, transfer it to a blender, and blend until smooth. You may need to add a little water to help it blend smoothly.
Step 6
Finish the sauce: Return the sauce to the pan and stir in the cream, sugar, and kasoori methi. Add the chicken with any juices back to the pan and simmer for 8-10 minutes until the chicken is fully cooked and the sauce thickens. Set aside.
Assemble the Pizza:

Preheat the pizza oven: Preheat your oven to 420°C

Shape out the pizza dough: shape your dough without pressing the edges.

Assemble the pizza: Spread a layer of the butter chicken sauce (including a few pieces of chicken) over the pizza dough. Top with shredded mozzarella and cheddar cheese.
Step 10
Bake: Transfer the pizza to a preheated oven and bake for 60-90 seconds, or until the crust is golden and the cheese is bubbly.
Step 11
Garnish and serve: Garnish the baked pizza with fresh cilantro leaves and thin slices of red bell peppers. Serve hot, perhaps with a side of raita or extra butter chicken sauce.
