Ingredients

For The Chicken

2chicken breast
cut into small chuncks

2 Tbspplain yogurt

4garlic
minced or sub for 1 Tbsp garlic paste

1 Tbspginger
minced, or sub for 1 Tbsp ginger paste

1 TbspGaram Massala

1 Tbspolive oil

1 tspcayenne pepper

1 tspcumin powder

salt
to taste

pepper
to taste

½ tspcurry powder

¼ tsptumeric
For The Sauce

0.5onion
small, diced

2 Tbspcan diced green chilies

2 Tbspunsalted butter

3star anise
optional

1can diced tomatoes
small

1 Tbsptomato paste

1 pintHeavy cream
adjust if needed

2 tspgaram massala

½ tspground coriander

½ tspcurry powder

1 tspcayenne pepper

1 tspred pepper flakes

1 tspcumin powder

½ tspchicken bouillon powder
optional

0.25white pepper
optional

½ tspgarlic powder

Salt

pepper
TT, if needed

Parmesan reggiano
as needed

Instructions
Step 1
In a bowl add all the chicken chunks along with all the ingredients/spices listed. Mix then allow to marinade for at least 1 hour.




Step 2
Over medium heat add 1 Tbsp of oil , once hot add the chicken. Work in batches if needed. We’re only looking to to sear the chicken about 2 min each side.

Step 3
Once you’ve brown the chicken, remove then aside. Add the onion, green chilies, butter and the star anise. sauté for a few minutes then add tomato paste & the diced tomatoes.


Step 4
Sauté for few more minutes then REMOVE THE STAR ANISE. Add the heavy cream then season with listed spices, simmer for a few minutes before adding it to a food processor


Step 5
Blend the sauce until smooth; then add it back to the pan on low heat. Add the chicken back in. Letting it cook through as it simmer through the sauce.
Step 6
Add the pasta and the Parmesan cheese mix. Plate it up , garnish with the parsley and some more Parmesan reggiano. Serve it up and enjoy !
