Instructions

Step 1
In a large pot, boil your potatoes. Once fork-tender, remove from water to cool until they're able to be handled.
Step 2
Peel the potatoes and cube them. Add them back to the pot along with the ham.
Step 3
Pour in the cream of mushroom soup and a splash of the evaporated milk. Stir. Slowly, add in more evaporated milk to achieve your desired texture. Season liberally with dried basil and pepper. Stir through. Add salt only if needed.
Step 4
Bring this to a simmer to allow the potatoes and ham to heat through. Stir often to avoid scorching.
