Fried rice is one of the easiest to make rice recipes around. Rich in vegetables and can be customised to one's taste.

Instructions
Step 1
Wash and Parboil 3 cups of rice for 15 minutes
Step 2
Sieve the parboiled rice and set aside
Step 3
Season your chicken with curry, thyme, salt, pepper powder and seasoning cubes and allow to marinate for 10-20mintes.
Step 4
After marinating the chicken, place it in a pot and steam for 5minutes to allow its juices flow out. After which you add just enough water to cover the chicken.
Step 5
Allow the chicken cook for 20-25minutes.
Step 6
Cut your carrots, green pepper, green beans, onions, tomatoes and spring onions to your desired sizes. Feel free to add any more vegetables of your choice.
Step 7
Remove the chicken and fry until brown with groundnut oil, once you've removed the chicken. Using that same oil fry your cut vegetables, add some curry and thyme and one seasoning cube along with a pinch of salt to give some flavor.
Step 8
Once fried, set aside.
Step 9
Fry your parboiled rice a bit, adding in a little bit of curry and a seasoning cube with a pinch of salt. Then add the chicken broth and allow to boil for another 15 minutes
Step 10
With five minutes left of the cooking time add in your fried vegetables and allow to steam with the rice.
Step 11
Once dry, your fried rice is ready. Feel free to enjoy it with a side of cabbage fir that extra crunch.
