Instructions
Step 1
1. Prepare the Buckwheat according to the packet instructions. After cooking, let it cool.
Step 2
2. Heat half of the Olive Oil in a skillet over medium heat. Add the chicken breast, season with salt, ground black pepper, and cook for about 5-7 mins on each side until golden.
Step 3
3. Mix cooked Buckwheat with the remaining olive oil.
Step 4
4. Place the rocket, Buckwheat, tomatoes and sliced cooked chicken breast on a plate.
Step 5
5. Top with Hummus and parsley.
