Balsamic Mushroom Goat Cheese Ravoili

Instructions
Step 1
Rinse and chop mushrooms. Chop garlic.
Step 2
Heat butter in a saute pan and saute garlic and mushrooms for 5 minutes or until mushrooms become tender. Lightly season with salt and pepper.
Step 3
Add mushrooms and goat cheese to a bowl and mix together to combine. Set aside about 1/4 cup of mushrooms to use as a topping.
Step 4
Bring a large pot of salted water to a boil.
Step 5
While water comes to a boil, make your pasta dough. In a bowl or on your counter top, mix together flour and 1 teaspoon of salt. Make a small well in the middle of the flour and crack 2 eggs inside. Using a fork, scramble the eggs and slowly work the flour into the mixture, mixing the dough together with your hands or a wooden spoon. Don't over mix your dough or it will become dense and hard to work with.
Step 6
Roll your dough out on the counter top until it's about an 1/8th inch thick (aka paper thin!). Using a round cookie cutter or the rim of a water glass, slice out dough rounds and set aside.
Step 7
One by one, fill your ravioli by placing roughly 1 tablespoon of mushroom mixture inside. Top it with another dough round and press the edges together. Use a fork to crimp the edges to help seal the ravioli. *avoid over filling your ravioli or they will be hard to seal.
Step 8
Drop your ravioli into simmering salted water and cook for about 3-4 minutes. They should float to the top when they are done.
Step 9
To serve., top ravioli with extra sauteed mushrooms and a drizzle of olive oil and balsamic vinegar.
