Zoe Mushroom Stroganoff with Butter Bean mash

Mushrooms are a favourite of mine, not only for their health benefits but also their culinary versatility and flavour. Choose whichever variety you like best for this dish or - even better - a mix. The butter beans are a great alternative to mashed potato, with loads more fibre, and you'll receive fantastic gut health benefits from the probiotics in the kefir. Just be sure to stir it through at the very end

Step 1
Add the butter beans to a food processor with a pinch of salt and pepper. Blitz until almost smooth, adding a little liquid from the tin if the mash is too thick. Transfer to a medium saucepan.

2. Heat the olive oil in a large lidded frying pan and sauté the onion for 3 minutes over a medium heat, until translucent. Add the garlic and cook for 30 seconds more, then tip the mushrooms into the pan and mix together. Cover with the lid and cook for 7 minutes, stirring occasionally, until the mushrooms are soft and turning golden.

3. Add the mustard, paprika and chestnuts and cook for 1 minute. Turn off the heat and add the spinach, stirring to combine, then place the lid on top and leave to rest for 5 minutes, to allow the spinach to wilt.

4. Place the butter bean mash over a medium heat and stir until heated through.
Step 5
5. Remove the lid from the stroganoff, add the kefir and stir everything together until combined. Season to taste and serve with the mash.
