Chicken & Bacon Gnocchi Soup
Serve the soup hot, with extra Parmesan and bacon if desired.

Ingredients

1 tablespoonolive oil
4 stripsbacon
thick-cut, chopped
1onion
medium, chopped
2carrots
peeled and diced
2 stalkscelery
diced
3 clovesgarlic
minced
1 poundchicken breast
cooked and shredded
1 teaspoondried thyme
Salt
pepper
to taste
4 cupschicken broth
1 cupheavy cream
1 x 16 ouncepotato gnocchi
3 cupsbaby spinach leaves
1 cupParmesan cheese
freshly grated
Instructions
Base
Step 1
1. In a large pot, heat the olive oil over medium heat.
Step 2
2. Add the chopped bacon and cook until crispy.
Step 3
3. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the drippings in the pot.
Remaining Prep
Step 4
1. Sauté the onion, carrots, and celery in the bacon drippings until they are soft, about 5 minutes.
Step 5
2. Add the minced garlic and cook for another minute.
Step 6
1. Stir in the shredded chicken, thyme, salt, and pepper.
Step 7
1. Pour in the chicken broth and bring the soup to a gentle boil.
Step 8
2. Reduce the heat and let it simmer for a few minutes.
Step 9
1. Add the gnocchi to the pot and cook until they float to the top, about 3 to 4 minutes.
Step 10
1. Stir in the heavy cream and add the spinach leaves, letting them wilt slightly.
Step 11
2. Sprinkle the cooked bacon and freshly grated Parmesan on top.
Step 12
3. Stir to combine.
