Instructions

Step 1
Season the pork belly with salt and pepper and wrap it in foil.
Step 2
Place it over low to medium coals for 1 hour, turning after 30 minutes.
Step 3
Remove the foil and score the fat in a diamond pattern or small squares.
Step 4
Return the pork belly to the coals.
Step 5
In a small bowl, combine the brandy and brown sugar, then spread the mixture over the pork belly while it cooks.
