Ingredients

12 ozwhole grain pasta
or your favorite
1 x 15 ozcan black beans
drained and rinsed
4 cupsfresh spinach
roughly chopped
2 cupsParmesan cheese
shredded, or mozzarella
1 x 14.5 ozcan diced tomatoes
undrained
1onion
small, diced
3cloves garlic
minced
2 tablespoonsolive oil
4 cupslow-sodium vegetable broth
or chicken
1 teaspoonitalian seasoning
salt
to taste
pepper
to taste
Red pepper flakes
fresh basil
for garnish, Optional
Instructions
Sauté Vegetables
Step 1
In a large skillet or deep pan, heat olive oil over medium heat.
Step 2
Add the diced onion and sauté until translucent, about 3-4 minutes.
Step 3
Add minced garlic and cook for another minute until fragrant.
Step 4
Add the diced tomatoes (with juice), black beans, and Italian seasoning to the skillet.
Step 5
Pour in the broth and bring to a boil.
Cook the Pasta
Step 6
Once boiling, add the pasta to the skillet. Stir to ensure the pasta is submerged in the liquid.
Step 7
Reduce heat to medium-low, cover, and let simmer for about 12-15 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.
Add Spinach and Cheese
Step 8
Stir in the fresh spinach and let it wilt, about 2 minutes.
Step 9
Sprinkle the shredded cheese over the top, stirring until melted and well combined.
Step 10
Season with salt and pepper to taste. Add red pepper flakes if you prefer a bit of heat.
Step 11
Garnish with fresh basil leaves and serve hot.
