Instructions
Step 1
Heat the oil in a large casserole dish or pan, then add the onion and gently fry for 5 mins. Add the chopped potato and carrot and fry for a further 5 mins, then add the garlic for another 3 mins.
Step 2
Add a little more oil if needed, plus the sausages and fry for 5 mins until browning, then add the herbs and spices and stir for 2 mins to release the flavours
Step 3
Stir in the chicken stock, beans, tinned tomatoes, spinach and wine. Simmer for 40 mins, then season with salt and pepper
Step 4
SLOWCOOKER METHOD Follow steps 1-2, then transfer to your slow cooker. Add the rest of the ingredients - but only 300ml of chicken stock. Slow cook on medium for 80 mins.
