Instructions

Step 1
In a pot, add a drop of oil, and heat it over medium heat.
Step 2
Add the onion, pepper, celery & garlic and cook for about 4 minutes.
Step 3
Add in the sausage and cook for about 2 minutes (just looking to brown the sausage at this point)
Step 4
Add all other ingredients - veggie broth, salsa, rice and seasonings
Step 5
Bring to a boil, cover, reduce the heat to simmer, and let it cook for 15 minutes, stirring occasionally.
