Instructions
Step 1
Marinate the Chicken: > Cut chicken thighs into long strips and set aside.
> In a bowl, combine red wine vinegar, olive oil, grated garlic, oregano, salt, and pepper
> Add the chicken strips, tossing to coat evenly
> Cover and marinate for at least 30 minutes (or up to 4 hours) in the refrigerator for maximum flavor.
Step 2
Prepare the Skewers: >Thread the marinated chicken strips onto skewers in a ribbon-like pattern.
> If grilling: Preheat the grill to medium-high heat, or if cooking indoors, heat a large pan over medium-high heat with a small amount of oil.
Step 3
Grill or cook the skewers for 4-5 minutes per side or until the chicken is fully cooked and has a nice golden char.
Step 4
Salad: > In a large bowl, mix cucumber, feta cheese, pickles, and red onion. Drizzle with red wine vinegar and olive oil, tossing to combine. Add dill if using, and season with salt and pepper to taste.
