Creamy Rotisserie Chicken Soup

Ingredients
4 servings

oil

½ cupcelery
minced

½ cupcarrots

½ cuponion
minced

1 tablespoongarlic

1 tsporegano

1 tspthyme

salt

pepper

2 cupschicken stock
pepper Rotisserie chicken
Traditional or lemon, shredded

1 cupheavy cream

1 cupdry ditalini pasta

Baby spinach

basil

parmesan
Shredded, for serving
Instructions
Step 1
Drizzle oil in a pan over medium heat. Sauté vegetables until they begin to soften.
Step 2
Add dried herbs and minced garlic, stir until aromatic, stir about 30 seconds to a minute
Step 3
Add chicken stock and cooked shredded chicken. Stir and cook for about 3-5 minutes.
Step 4
Add heacy cream and pasta. Stir and let cook until pasta is done, checking for done around the 8 minute mark.
Step 5
Before serving, add fresh herbs and stir for about 30 seconds or until wilted. Serve with shredded parmesan over top.
