Instructions

Step 1
Melt the butter gently in a saucepan, then stir in the flour to make a roux.
Step 2
When the flour and butter make a smooth paste, gradually stir in the beer and the milk, cooking it gently until the sauce thickens. Add a little over half the grated cheese (retaining some to spread over the sauce – extra cheesy).
Step 3
Add our delicious Dijon Mustard into the sauce and season, stirring until the cheese melts and the sauce bubbled and thickens.
Step 4
TIP – to avoid a very messy Air Fryer, I cut a piece of foil (from old Chinese takeaway tin trays) to layer the bottom of the Fryer. Because the bread is already toasted (see below) it’s the easiest and cleanest way to work.
Step 5
While the Air Fryer is pre-heating, toast 2 x slices of bread. Top with half the sauce and grated cheese, pop them into the rack at 200C and cook for 4 – 5 minutes while the other two slices of bread toast – and repeat.
Step 6
Serve with Red Onion Marmalade for a deliciously cheesy snack.
