Instructions
Step 1
chop the onion, garlic, carrots and celery





Step 2
cook the soffritto on medium heat in EVOO for 5-10 mins






Step 3
add tomatoes and crush them while they are in the pan; cook on low - medium heat for a few min



Step 4
add seasonings and about half of the basil, then cook on low flame for 1 hour



Step 5
cook the spaghetti until al dente then add to the sauce pan along with a few ladles of pasta water and stir





Step 6
add the rest of the basil and (optionally) some parmasean cheese, then serve
