Crispy potato and carrot sticks - baked in fan oven or air frier

Instructions
For 10 crispy sticks
Step 1

Pierce the potatoes all over with a fork and cook them in the microwave until soft for 8-10 minutes. Cooking them unpeeled in the microwave keeps the starch in and make a drier mash. Once cooked, let them cool down a bit and peel them with a knife.





Step 2

While the potatoes are cooking, peel and grate the carrots.


Step 3

Put the potatoes In a large bowl, roughly mash them with a fork and add the egg, herbs, spices and salt and pepper to taste.







Step 4

Keep mashing and turning the ingredients until you have homogeneous mix with no lumps.


Step 5
Add the grated carrot and grated cheese to the bowl and mix well with a spatula.




Step 6

Transfer the mix onto a flat surface and flatten it with the spatula to an even thickness. Split the mix in 10 equal parts.

Step 7

Line a baking sheet with aluminium foil and spray or brush with extra virgin olive oil. Pre-heat the fan oven to 200C (400F).


Step 8

Oil your hands, and mould the dough chunks into stick shapes, and place them evenly spaced on the lined baking sheet.


Step 9

Spray them or brush them with extra virgin olive oil, and bake on fan oven at 200C (400F) for about 20-25 min until golden. You can alternatively bake them on the air fryer at 180C (350F) for about 10-15 minutes until golden. Don’t overcrowd the air fryer, you’ll probably have to cook them in batches.


Step 10

Serve straight away, with your favourite dipping sauce (ketchup, aioli or marinara sauce work great).
