Pierce the potatoes all over with a fork and cook them in the microwave until soft for 8-10 minutes. Cooking them unpeeled in the microwave keeps the starch in and make a drier mash. Once cooked, let them cool down a bit and peel them with a knife.

Spray them or brush them with extra virgin olive oil, and bake on fan oven at 200C (400F) for about 20-25 min until golden.
