CHICKEN TORTILLA SOUP RECIPEšŸ‘‡šŸ¼

idc if itā€™s still hot out. September = soup seasonšŸ¤© My absolute fav dinner/meal prep because it truly checks every box!! High proteināœ… high volumeāœ… super nutrient denseāœ… easy to prepāœ… tastes delicious for daysāœ… HIGHLY recommend adding this into your meal prep rotation if youā€™re struggling with your nutritionā¤ļøā€šŸ”„ CHICKEN TORTILLA SOUP RECIPEšŸ‘‡šŸ¼ - Chop up 1 big onion & add to a pot. Cook for ~3-5 min in some olive oil. - Chop up 3-5 garlic cloves and toss them in! A diced jalapeƱo is great here too. - Then, add in your rinsed/trimmed chicken breasts. I used 4 large breasts here but even just 2 is fine. We just go for that extra protein around herešŸ˜ - Add in paprika, cumin, salt, pepper, and garlic powder. Itā€™s easy to go under on this so Iā€™d add in extra on this one! - Add in 1 large can of fire roasted crushed tomatoes. I used most of a 28 oz can. - Add 1 carton of chicken broth & cover. Bring to a boil for 15 minutes. - After 15 min, add 2 cans of drained black beans & a package of fire roasted corn. Boil another 10 min. - Take your chicken out and shred in a bowl. Add back in! - Done! Top with whatever you like. Iā€™m used avocado, cilantro, tortilla chips, and Greek yogurt (great sour cream alternative). Cheese is great too here but I didnā€™t have any! Step 1
