Instructions

Step 1
Char tomatoes on high heat in a pan. Transfer to a bowl and let the pan cool slightly.
Step 2
Heat 5 tbsp oil and saute onions for 6 mins until softened. Add about 6 garlic cloves and cardamom and saute for 2 mins until lightly brown.
Step 3
Add spices (cumin, chili) and cook for 30 seconds, then stir in tomato puree, 1.5 tsp salt and pepper. Cook for 7 mins until thickened.
Step 4
Add 250ml water and cook for 8 more minutes, then reduce to medium, add green beans and cook for 12 mins.
Step 5
Add charred tomatoes, cook with lid on for 8 mins until the beans are soft. Stir in chopped coriander.

Topping:

Step 6
Heat 3 tbsp oil and 4 sliced garlic in a small frying pan and cook on medium for 8 mins until golden and crispy.

Serve:

Step 7
Transfer green beans to a large shallow bowl or platter. Top with extra coriander and spoon over fried garlic and oil. Serve at room temperature.
