Instructions
Step 1
Beat the butter (room temperature), sugar, molasses and vanilla until light and fluffy. Do this by hand.

raw sugar¾ cup
molasses1 Tbsp
vanilla extract1 teaspoon

Sift the flour and mix it into the butter sugar
all-purpose unbleached flour1 ½ cups
Step 3
Boil the water and dissolve the baking powder in the water. It should foam up. Pour the water-baking powder mixture into the batter.

Stir in the rolled oats, raisins, sliced/chopped nuts, dessicated coconut (optional) and cinnamon (optional).

Step 5
Create balls of dough using a ice cream scooper with spring action to place the dough on unbleached parchment paper.
Step 6
Cook at 350°F (175°C) for 15 minutes. Take them out when they are turning golden brown. You do not want to over cook them and these cook fast. Mine were in too long as you will see from the photo. The one I pulled off to test 2 minutes beforehand was a little gooey but tasted much better. You can leaving in 5min longer if you prefer your cookies crunchy.
