Green beans with orange mustard dressing

Green beans with mustard dressing is one of our favourite French dishes. Here we added some orange zest and marmalade for a subtle zingy flavour. If you don’t have marmalade in your cupboard, you can substitute by chopping up some orange segments and stirring these through instead.

Instructions

Step 1
Bring a medium pan of salted water to a boil, then add the beans and cook for 3 minutes, until just tender. Meanwhile, fill a large bowl with very cold water. Once the beans are cooked, strain and plunge into the cold water. Strain again and leave to air dry in the colander.
Step 2
Add the onion, oil, spices, ½ teaspoon of salt and a good crack of pepper to a small saucepan and cook over a medium heat for 10 minutes, stirring occasionally, until the onions have softened and have turned translucent. Transfer to a large mixing bowl and add the mustard, marmalade, and vinegar
Step 3
To serve, mix the beans into the dressing and transfer to a large plate. Sprinkle the orange zest strips and chervil over the top.
