Step 1
Cut long clean cactus into ½ inch small strips, throw in boiling water to cook for 8-10 minutes, transfer to iced water to cool off before plating.
Step 2
In a bowl, mix in diced garlic and ginger, chopped scallion, then pour in sizzling oil to sear until aromatic. Further add in light soy sauce, dark vinegar, Szechuan peppercorn power, Szechuan chili oil (or any spicy chili powder /flakes you like), oyster sauce, sesame oil, sugar, finally garnish with sesame seeds.
Step 3
Pour the chili sauce over cooked cactus and garnish with chopped scallion, serve immediately!
