Instructions
Step 1
Skin, wash and cut up potatoes
Step 2
Boil potatoes for 5 minutes, then simmer for 10 minutes, meanwhile air fry bacon
Step 3
Drain potatoes, then melt butter and sauté onion in the same pot for 5 minutes
Step 4
Add flour and cook for 3 minutes
Step 5
Whisk in chicken broth, add in milk once broth has thickened, then season
Step 6
In a separate bowl, combine sour cream, cream cheese and 1 cup of hot soup mixture, then add mixture to pot
Step 7
Add in cheese
Step 8
Add potatoes to soup and mix well
Step 9
Top bowls with crumbled bacon
