Chicken Satay Bowls

Instructions

Step 1
Cook rice according to packet instructions.
Step 2
Season chicken with salt, pepper and paprika. Add to a non-stick pan over medium-high heat and cook for 5-8 minutes or until cooked through.
Step 3
Combine satay sauce ingredients in a small saucepan over medium heat. Cook, stirring, for 3-5 minutes or until combined.
Step 4
Steam broccoli.
Step 5
Divide rice into two serves. Top with chicken and satay sauce. Then top with broccoli, carrot and cucumber. Store leftovers in the fridge.
