Instructions
Step 1
As with most recipes, open a bottle of cold white wine - Sauvignon Blanc, Pinot Grigio, Viognier - and pour yourself a glass, whilst reserving the bottle for later
Step 2
Take the cod fillets and pat them dry with kitchen towel. Place them in an oiled pieces of aluminium foil, add salt and pepper to both sides, and loosely close the paper over to make a loose pocket
Step 3
Put the cod pockets in the oven for 20 minutes on 180 degrees
Step 4
In a small saucepan add the olive oil, chopped garlic and chilli flakes, and let them warm through and start to sizzle. Add the finely chopped onion and let that brown
Step 5
Add the tangerine segments and let the mixture start to thicken - 3-4 minutes
Step 6
Turn the heat down and pour in the white wine, and let simmer for 8-10 minutes. Then add the lemon juice, a dash of the fish sauce, sugar, basil, and season well.
Step 7
The mixture should be thickening through, and turned a lovely orange/brown colour - the texture of making marmalade!
Step 8
Remove the cod fillets from the oven and serve on a warmed plate with fresh vegetables (carrots, broccoli, baby corn go well), then spoon the white wine and tangerine mixture on top and eat. Bon Appetit!
