Instructions
Step 1
Peel and thinly slice onions. Cook in a 2-3 Tbs melted butter letting them brown slightly.
Step 2
Remove from heat and let onions cool. Sprinkle with flour. Mix well with wooden spoon.
Next step is critical to avoid lumpy soup.
Step 3
Under very low heat, cook the onions & flour for 10 to 15 minutes. Mixing well with a wooden spoon.
Step 4
Add the stock and gently bring to a simmer. Mixing well.
Step 5
Add herbs and spices and simmer for 10 minutes
Step 6
Put the soup in individual oven proof bowls and cover with slice of bread. Sprinkle with cheese and place in a hot oven or broil until cheese has melted or browned.
