A sweet and spicy take on chicken to make your tacos better. I used a Blackstone flat grill, but this can easily be done on a regular grill by basting the chicken with marinade as you cook it.

Instructions

Step 1
Cut the chicken into bite-size strips using kitchen scissors.
Step 2
Combine all liquids in a bowl, add spices, and mix well to help dissolve the anchiote paste.
Step 3
Add chicken and mix around to get good coverage.
Step 4
Store in a bowl or plastic bag and marinate for 8 hours.
Step 5
If using a flat grill, pour the marinade and meat on the grill.
Step 6
Cook until meat has a nice, dark red color all around, and the marinade begins to carmelize on the chicken.
Step 7
Serve in tortillas with your favorite taco toppings.
